  <p>These are not ordinary spicy onion rings. The proprietary PyroDust blend features ghost pepper, Carolina reaper, and Trinidad scorpion, and it is worked into the flour, lightly dusted over one side after frying, and mixed into the dipping sauce. The sweet white onion and creamy, acidic dip balance the intensity while preserving the flavor of the crust.</p>

  <h2>Build a Crust That Stays Attached</h2>

  <p>The onion rings soak for about 10 minutes in buttermilk and beaten egg. The first flour coating is allowed to sit until the dry patches hydrate and turn tacky. Then the rings go back through the wet mixture, into the seasoned flour a second time, and rest again while the oil comes to temperature.</p>

  <p>That resting time matters. It gives the flour and liquid time to bind into a rough shell instead of dropping loose flour into the oil. The second dredge creates the thick, craggy surface that gives these rings their fried-chicken-style crunch.</p>

  <h2>Use the Large Rings</h2>

  <p>Slice a white onion roughly a finger-width thick, about 1/2 to 5/8 inch. Use the large and medium rings. Save the small center pieces for another cook. Their openings are small enough that the double coating tends to fill the center with a dense plug of breading.</p>

    <strong>Cutting tip:</strong> Thick rings stay juicy through both fries. Thin rings can overcook, pull away from the crust, or lose too much moisture before the coating is crisp.

  <h2>Fry Twice, Watch the Crust</h2>

  <p>Bring the oil near 375&deg;F. Once a batch goes in, the oil may settle closer to 350&deg;F. That range is fine. The first fry is finished when the coating is firm and lightly colored. Do not chase an exact minute count. Ring size, oil depth, batch size, and temperature recovery will all change the timing.</p>

  <p>Cool the first-fried rings on a wire rack. The open rack lets steam escape from every side and helps the crust firm up. Once the batch has rested, bring the oil back to about 375&deg;F and fry again until the rings reach the color and crunch you prefer.</p>

  <p>Some people want a lighter golden crust. Others want it deeper and harder. Both work. The pepper-heavy seasoning naturally darkens faster than plain flour, so pull the rings before the chile powders taste scorched or bitter.</p>

  <h2>Layer the Heat Three Ways</h2>

  <p>The heat does not come from one oversized dose. It is layered across the entire bite:</p>
