Broccoli doesn't have to be boring. Give it a little oil, a good dusting of PyroDust Steak Seasoning, and enough heat to develop those browned, crispy edges. Finish it with freshly grated Parmesan and a squeeze of lemon, and you've got a side dish that might just steal the show.
Roasted Broccoli with Crispy Edges
I like roasting broccoli in a cast-iron skillet at 400°F. The florets pick up some char, the edges get crisp, and the stalks turn tender. It's a simple way to bring out a lot more flavor than you'd expect from a head of broccoli.
The seasoning is straightforward: avocado oil, or whatever cooking oil you prefer, and PyroDust Steak Seasoning to taste. I don't measure the seasoning for this one. Just give the broccoli a good dusting, toss it to coat, and spread it out so it can roast evenly.
Let the Broccoli Get Some Color
Roast the broccoli at 400°F for about 25 to 35 minutes, until the edges are charred and crisp to your liking. Floret size makes a difference, so use the color and texture as your guide rather than watching the clock alone.
Try not to crowd the skillet. Keeping the broccoli in an even layer helps it roast instead of trapping moisture and steaming.
The Parmesan and Lemon Finish
As soon as the skillet comes out of the oven, grate fresh Parmesan over the hot broccoli and give it a moment to soften and melt. Then squeeze half a lemon over the top. The lemon brightens up the roasted flavor and balances the richness of the cheese.
Want a little extra kick? Finish with a sprinkle of red pepper flakes.

Cook's Notes
Floret size: Smaller florets will brown faster; larger ones may need the full roasting time.
Seasoning: PyroDust Steak Seasoning contains salt, so season to your taste.
Servings and prep time: Estimated for one average head of broccoli. Four side portions, or fewer if you like a generous serving.
